Green tea originated in China, but is now associated with many different cultures throughout Asia.  Green tea was first brewed in 2737 B.C. during the reign of Emperor Chen Nung, and has been used as a drink as well as a medicine.  Green tea has a high amount of polyphenols and antioxidants.  Over the last few decades green tea has been tested in many medical studies to determine the extent of its health benefits, with some evidence suggesting that people who drink green tea on a regular basis may have a lower risk of developing heart disease and certain types of cancer.  

Green tea is grown in a variety of ways, depending on the type of tea desired.  There are two types of growing conditions; tea grown in the sun or grown in the shade.  The tea plants are harvested about three times a year.  The first flush takes place in late April to May, the second from June to July and the third picking from late July to early August.  The first flush brings the best quality leaves, with a higher price to match.  Many varieties of green tea can be created, and they can differ in taste due to growing conditions, harvesting time, processing or terroir.
