Matcha geen tea gets its claim to fame from Japan, and due to the small production in that country as well as the special stone grinding of this tencha green tea it is very special indeed. Match has a high amount of polyphenols and antioxidants and up to 137X that of regular green tea.  Over the last few decades green tea has been tested in many medical studies to determine the extent of its health benefits, with some evidence suggesting that people who drink green tea on a regular basis may have a lower risk of developing heart disease and certain types of cancer.  

Matcha starts off as typical Japanese green tea until the last 3 weeks of the growing season when it is grown in the shade with tarps put over top of the plants to keep all of the nice bright green chlorophyll in the leaves.  This tencha then either becomes gyokuro or matcha.  Matcha is best kept refrigerated as it is ground into a fine powder.  Matcha is the only tea that is consumed, vs typical tea is steeped in water then the leaves are discarded but not with matcha!  Get all is deliciouness and fibre by drinking the entire solution.
